Grilled Cheese Sandwich with Bartlett Pear

  • 2 slices whole grain bread
  • Brie cheese, sliced ¼" thick
  • 2 year old cheddar cheese (extra sharp), sliced ¼" thick
  • 1 Bartlett pear, sliced ⅛" thick
  • Spinach, wilted and chopped
  • Sliced almonds
  • Grainy mustard and creamed clover honey
  • Extravagonzo Culinary Oil, Roasted Garlic works well with this one, but you can experiment with the other flavors
  1. Preheat griddle to medium-low temperature
  2. Place one layer of brie cheese on one slice of bread
  3. Put a light layer of the creamed clover honey on the cheese
  4. Place a layer of spinach atop the brie cheese
  5. Sprinkle the sliced almonds atop the spinach
  6. Place a layer of pear slices atop the almonds
  7. Spread a light layer of the grainy mustard on the pear slices
  8. Place a layer of cheddar cheese atop the pears
  9. Place the second slice of bread on the cheddar cheese
  10. Drizzle 1 tablespoon Extravagonzo on the griddle and spread evenly with spatula
  11. Carefully place sandwich on the griddle; slide it around to absorb the oil around the edges
  12. Cover with saute pan lid (large enough to cover the sandwich) to hold the heat in
  13. When the bottom of the sandwich gets golden crispy, lift the sandwich from the griddle
  14. Drizzle a bit more Extravagonzo Oil on the griddle
  15. Carefully flip the sandwich and place back on the griddle to toast the other side
  16. Put cover back over sandwiches
  17. Cook until bottom is golden crispy
